Vegan Peanut Butter Blondies created by the lovely, talented Sarah from www.sarahshealthybakes.com

Ingredients:

240g banana (approx 2)

15g coconut oil, melted

130g peanut butter (I used crunchy but smooth will still work)

60g date syrup (or any liquid sweetener)

1 tsp apple cider vinegar

1 tsp vanilla extract

60g oat flour

25g sachet No Whey Box vanilla

1/4 tsp baking powder

1/4 tsp baking soda

50g vegan dark chocolate chips

Method

1. Mash the bananas in a large bowl. (Or if using a food processor whizz up until smooth).

2. Mix in the coconut oil, peanut butter, date syrup, vinegar and vanilla extract. (If using a food processor pulse in all these ingredients).

3. Mix in remaining ingredients. (If using a food processor pulse in remaining ingredients apart from the chocolate chips- fold these in last).

4. Spoon into a lined tin and bake on 175˚fan for 18-20 minutes.
