Katie Groome (Instagram @cakesvsscales) whizzed up these mint chocolate truffles in less than 10 minutes using a sachet of Whey Box mint chocolate protein and everyday cupboard ingredients. Even though they’re even healthy enough to eat for breakfast, they feel perfect for an after dinner snack with a de-caff coffee!
Here’s the recipe:
- x1 sachet Whey Box mint chocolate protein
- 85g oats
- 85g medjool dates
- 15g cocoa powder (plus more for coating)
- 20g chia seeds
Start by softening the dates in hot water then, add all of the other ingredients to a high power processor. Blend for roughly a minute or until a ‘dough’ forms. Using a teaspoon, scoop the mix out, roll in to balls and dust with cocoa powder. Leave in the fridge to set for 30 minutes and then voilà!
These will last for up to 5 days in a sealed container and kept in a cool place.
