Banoffee Blondies


  • 1 tin of butter beans, drained
  • 2 sachets toffee whey box
  • 2 ripe medium sized bananas
  • 60g Almond butter
  • ½ tsp bicarbonate of soda
  • ½ baking powder
  • Handful of cacao nibs, chocolate chips or chopped chocolate bars (optional)
  • 1 extra banana for decoration (optional)


  1. Grease your blondie tin well and preheat the oven to 170 degrees
  2. Blend all ingredients apart from the cacao nibs and final banana until you get a smooth mix
  3. Mix in the cacao nibs and any other extras you fancy
  4. Tip into your tin and top with the extra banana
  5. Cover with foil and bake for 30-35 minutes (removing the foil for the last 5 minutes) – the knife may not come out completely clean but I find it carries on cooking slightly as it cools which makes it stay nice and fudgy, but you can cook it for longer until a knife comes out clean if you like.
